I am just wondering which companies manufacture good performance chips for 87 GN's

Red Armstrong, Full Throttle, Jay Carter, etc.
Just get them matched to the injectors.
This was just discussed last week. I am going to learn how to post a link for a post one day, lol.

I have been searching so these for a bit and cannot seem to find them. Any tips on sites I can go to for them?

I know Postons carries the Red Armstrong chips, call them 1.800.635.9781 or www.postonbuick.com and also,
www.fullthrottle.com
Don't know anything about where to get ahold of Jay Carter but have heard many good things about them.
